BOARD OF HEALTH
The Minutes of the Meeting of Wednesday April 5, 1989 at 7:30 PM. The meeting
took place in the Selectmen's Hearing Room, Town & County Building, Nantucket,
MA 02554. Board members present were Nancy Sevrens, Wayne Viera, John McLaughlin,
Augusto Ramos and Diane Coombs. Chairman Sevrens called the meeting to order
at 7: 30 PM.
Chairman Sevrens reopened a public hearing about Sanitary Code Violation Fees
which had been continued from the previous week. Mr. Viera read a letter from
the Nantucket Restaurant Association endorsing the proposal. Health Inspector
Richard Ray explained the fees and asked the Board to endorse the schedule
contingent on the passage of Article 84 at the Annual Town Meeting. He also
briefly described his vacation plans. Mr. Viera moved approval of the proposed
schedule of fines for sanitary code violations contingent on the passage of
Article 84 at the Annual Town Meeting of April 10, 1989; seconded by Mr. Ramos.
So voted.
The schedule of fines established for violations by type were:
One Hundred Dollars ($100) for each violation regarding Food Supply; PHF Temper-
atures; Facilities for Hot and Cold Storage; PHF Reservice; Employee Infections;
Employee Hygiene; Sanitation of Equipment and Utensils; Single Service Reuse;
Water Source; Sewage; Cross-Connections; Toilets/Handwashing; Insects/Rodents;
Garbage/Refuse; Outside Disposal; Toxics; Premises; Pets; Bulk Foods; and Salad
Bars.
Fifty Dollars ($50) for each violation regarding Food Containers; Spoiled/Damaged
Foods; Cross-Contamination; PHFs Thawed, Cooked and Cooled; Food Handling;
Employee Clothing; Food Contact Surfaces Clean; Dish/Warewashing Facilities;
Thermometers/Test Kits; Plumbing; Toilet Rooms; Outer Openings; Pesticide/Rodent~
icide Application; and Living Areas.
Twenty-Five Dollars ($25) for each violation regarding Food Protection; Food
Thermometers; Dispensing Utensils; Food Contact Surfaces; Non-Food Contact
Surfaces; Non-Food Surfaces Clean; Wiping Cloths; Dishes Pre-Scraped, Soaked;
Wash/Rinse Water; Equipment/Utensil Storage; Single Service Articles; Hand-
Iwashing Areas; Floors; Walls, Ceiling; Lighting; Ventilation; Dressing Rooms;
and Linen.

There being no further business before the Board of Health, the meeting was
adjourned at 7:35 PM to reopen as the Board of Selectmen.
