BOARD OF HEALTH
Minutes of August 6, 1986 meeting
The meeting was called to order at 7:30 p.m. by Chairman Cabot who introduced
Phillip SHea, the new Superintendent, Department of Public Works. All members
were present, and Mrs. Sevrens moved approval of the minutes of the meeting of
July 16, 1986~ seconded by Mr. Clute~ so voted.
Mr. William McHugh, The Carriage House, presented the Board with an appeal with
regard to the notice received by Lodging Houses from Inspector of Health Richard
~ay, concerning the prohibition of servinq of breakfasts bv the Lodaina HOllSP.S
las specified in the Commonwealth of Massachusetts Department of Public Health
Sanitary Code, (Article X). Mr. McHugh, speaking on behalf of several Lodging
House owners/managers requested the Board's consideration of granting a variance
from the Code (105 CMR 590.061)
Mr. Ray noted that the "Continental Breakfasts" being served in many of the Lodg-
ing Houses include items with very high Ph levels which sou1d spoil and become
contaminated. He noted, however, that the preparation of muffins and baked good~
would be acceptable, if they are cooked at high temperatures for a long period I
of time, thus killing off any contaminants.
Mr. Grossman moved to approve the serving of the following items, as a variance,
from teh Restaurant Code: muffins, baked goods, coffee, tea, orange juice, fresh:
fruit, butter, jelly, dry cereal, and milk provided that proper refrigeration
is provided at all times~ seconded by Mr. Clute~ so voted.
There being no further business before the Board, Mr. Gardner moved to adjourn
at 7:51 p.m.~ so voted.
